Machine espresso uses precision pressure and incredible filter technology to produce the perfect cup of coffee. How exactly does it work?
Espresso is created by forcing hot water under high pressure through finely ground coffee. The process is similar to that of making drip coffee. However it is the pressure that makes the main difference.
The Head of the Group
The group head is the portafilter you put in when making espresso. It disperses the water into the portafilter, and regulates the pressure during the extraction. There are numerous kinds of group heads, each with its own advantages and drawbacks. Some are focused on temperature stability, others on pre-infusion capabilities, and still others are designed to control the lever. Some have a combination, such as the E61. This is a popular choice among baristas since it provides multiple benefits in a single package.
As you can see in the photo above, the group head has numerous notches that you can place your portafilter before twisting it manually to secure it. A rubber gasket is located within the notches to make a seal when you insert your portafilter. The notches on the head allow for a precise placement of the portafilter, which is necessary for an even extraction.
In addition to allowing you easily connect your portafilter, the group head is also responsible to ensure that the temperature remains even. It does this by cycling hot water through the brew container and around the portafilter to ensure that it is always at the correct temperature for extraction. This is important, as even a few degrees can make the difference between good and great espresso.
The Pump
The motorized pumps that are used in rotary espresso machines provide the nine atmospheric bar pressure required for espresso extraction. This differs from manual piston machines that rely on levers. The pressure builds by removing tap water from a reservoir, and pumping it through a heat exchanger prior being shot through the ground coffee in the group head.
Pumps tend to be less expensive than piston-driven machines, and they tend to last longer, although both types of machines may degrade with overuse and insufficient cleaning. They also create mechanical complexity and can lead to an expensive price for even the simplest models.
Some espresso machines make use of steam pressure instead of a pump to brew espresso. This can lead to over-extraction as the boiler that produces steam also heats the water to boil. In addition, these machines frequently have to restore their pressure between cups, which takes time and energy.
Many espresso machines use either a vibration or rotary pump. A vibration model utilizes a rotating disk to generate pressure, while a rotating model pushes hot water through the ground at a fast speed. The Boiler

This creates a layer crema that is then poured over. This is one of the main characteristics of a great espresso.
