Machine espresso makes use of precise pressure and mind-blowing filter technology to create the delicious coffee we enjoy. But how exactly does it work?

Espresso is created by forcing hot water under pressure through finely-ground coffee. The process is similar to making drip best coffee espresso machine but the major difference is in the pressure.

The Head of the Group

The name implies the group head is where you put your portafilter in when brewing espresso. It distributes water into the portafilter and regulates the pressure of the extraction. The Pump

Unlike manual piston machines, which rely on a lever that pressurize water, rotary espresso machines rely on motorized pumps that provide the nine atmospheric bars of pressure necessary for espresso extraction. This pressure builds up by removing tap water from a reservoir and pumping it through a heat exchanger prior to being shot through the ground coffee inside the group head.

Pumps are typically more affordable and last longer than piston-driven machines. However, both kinds of machines may degrade due to excessive use and insufficient cleaning. They also add mechanical complexity which can result in an expensive price for even the simplest models.

Certain espresso machines eliminate the pump completely and espresso machines instead make use of steam pressure to make espresso. The drawback is that the same boiler that produces steam also raises the temperature of water until it reaches boiling which can cause over-extraction. They also have to continually rebuild their pressure between cups. This takes energy and time.

Many espresso machines utilize either a rotary or vibration pump, which has a vibration model using a rotating disc to create the pressure and the rotary model pushing hot water through the grounds under high speed.
