Espresso is made by forcing hot water at high pressure through finely ground coffee. The process is similar to making drip coffee but the key difference is in the pressure.
The Head of the Group
The name implies the group head is the place you place your portafilter while brewing espresso. It distributes water into the portafilter, and controls the pressure of the extraction. There are various kinds of group heads each with its own advantages and drawbacks. Some are focused on temperature stability, some on pre-infusion capabilities, and still others are designed to control the lever. There are even some that have a combination of features, such as the E61, which is to be the most popular among baristas due to its capacity to offer multiple perks in a single package.
As you can see in the photo above the group head is made up of numerous notches that you can place your portafilter before twisting it by hand to secure it. There is also a gasket of rubber which is located inside the notches to help create an airtight seal after inserting your portafilter into the machine. The notches permit the precise placement of the portafilter. This is crucial to ensure a consistent extraction.
The group head is not just able to allow you to place your portafilter easily however it also keeps the same temperature. This is accomplished by cycling hot water around the portafilter, and through the brew basin, ensuring that the temperature is at the right level for extraction. This is crucial, since even a small difference in temperature can make the difference between good and excellent espresso coffee machines.
The Pump
Motorized pumps in rotary espresso machines provide the nine atmospheric bar pressure that is required to extract espresso. This is different from manually operated piston machines that employ levers. This pressure builds up by drawing tap water from a reservoir and pumping it through a heat exchanger prior being pushed through the ground coffee inside the group head.
Pumps are typically less expensive and last longer than piston-driven machines. However, both kinds of machines are susceptible to degrading due to excessive use and inadequate cleaning. They also add mechanical complexity, which can result in a high price tag on even the simplest models.
Certain espresso machines do away with the pump completely and use steam pressure to brew espresso. This can result in over-extraction because the boiler that makes steam also warms the water to boil. These machines also have to continually rebuild their pressure between cups. This takes energy and time.
Many espresso machines utilize a vibration or rotary pump, which is a vibration model using a vibrating disc to create pressure, and rotating models that push hot water through the grounds at high speed. Both machines can produce excellent espresso but rotary machines are more quiet, durable and less likely to break down.
The Boiler
The boiler is the part which heats the water to the ideal temperature for extraction. The steam that is produced gets to the portafilter which is the container that holds the espresso coffee grounds. It is then funneled into the cup. The steam creates enough pressure to push the grounds of the coffee through. This produces a layer of crema that is then poured over. This is a hallmark of a good espresso.
There are three types of espresso makers, and Affordable they differ in the type of pump they use and how hot the brew is. There are many ways to control the brew and the size of the cup that can be made by the machine.
The first espresso machines were steam types.
