How Does Machine Espresso Work?

Machine espresso utilizes precise pressure and mind-blowing filter technology to make the perfect cup of coffee. But how exactly does it work?

Espresso is produced by pushing hot water under high pressure through finely-ground coffee. The process is similar to making drip coffee, but the major difference is in the pressure.

The Head of the Group

The group head is the portafilter you place in the espresso maker when making it. It disperses water into the portafilter and controls the pressure of the extraction. There are several different types of group head, each with their particular advantages and drawbacks. Some are designed for the stability of temperature while some are designed to handle pre-infusion. Others are made to control the lever. Some include a combination like the E61. This is a popular choice among baristas as it provides a variety of benefits in a single package.

As you can see in the image above, the group head has several notches to put your portafilter, then twist it manually to lock it in. There is also a gasket made of rubber which is located inside the notches and helps to create an airtight seal when you insert your portafilter into the machine. The notches permit precise placement of your portafilter. This is crucial to ensure an accurate extraction.

The group head not only lets you to put in your portafilter easily, but it also maintains the same temperature. It does this by circulating hot water through the brew basket and around the portafilter, making sure that it is always at the right temperature to extract. It is important to note that even a small variation can mean the difference between a good and a great espresso.

The Pump

The motorized pumps in espresso machines that rotate provide the nine atmospheric bars of pressure required to extract espresso. This differs from manual piston machines that rely on levers. This pressure is generated by pumping water through a heat exchanger and then through the ground coffee.

Pumps are generally less expensive than piston-driven machines, and Machine Espresso they tend to last longer, however both types of machines can degrade with overuse and insufficient cleaning. They also increase the complexity of mechanical systems and can lead to a high price tag on even the most basic models.

Some espresso machines can eliminate the pump completely and utilize steam pressure to make espresso.
