How to Make Espresso Machine Coffee

The secret to making espresso is pressure. Here's how an espresso machine operates: a heater warms water to the perfect temperature, and then pushes it through the grounds and out the spouts.

Temperature

Espresso is made by forcing hot water, under pressure, through finely ground coffee beans. The temperature of the water is critical to the quality of the final shot. Low temperatures result in inadequate extraction of the essential flavor compounds. Temperatures that are too high can result in excessive extraction, which could result in a bitter or burned taste.

The ideal temperature range for espresso is between 195 and 205 degF. This temperature can be achieved by using a grouphead that is designed to ensure the same temperature and stability throughout the process of brewing. The E61 is the most well-known group head, as it provides temperature stability, pre-infusion capabilities, and lever control.

When altering the espresso machine to accommodate different roasts and brew ratios, it is important to consider the effect of temperature on extraction yield and crema. The ideal temperature will vary depending on the bean and roast. However, a general rule is that lighter roasts with higher brew rates need higher temperatures. In addition, a top thermocouple of good quality is essential to ensure a constant temperature.

Pressure

During the brewing process, espresso machine coffee is pushed through finely ground and tamped coffee grounds. This causes chemical reactions to extract flavors oils, flavors, and other soluble components from the beans. The resultant beverage is usually more flavorful and richer.

The ideal espresso machine's pressure is nine bar of pressure, which is the same as atmospheric pressure at sea level. The soluble compounds found in the espresso bean are most effectively extracted at this pressure.

Beans

Many of the best espresso machines come with a jug that can be filled with hot or cold milk along with a steam wand and portafilters for pulling the shot. Some models also have an integrated grinder along with a tamper, frother and tamper.
