How to Make Espresso Machine Coffee

The secret to making espresso is pressure. Here's how an espresso maker operates: a heating device is used to heat water to a suitable temperature, and then pushes it through the grounds and out the spouts.

Temperature

Espresso is produced by forcing hot water, under pressure, through finely ground coffee beans. The temperature of the water is vital to the quality espresso machine of the final shot. Low temperatures lead to a absence of flavor compounds. High temperatures cause over extraction and can cause a bitter or burnt taste.

The ideal temperature for espresso is between 195 and 205degF.
